Zapekanka - Ukranian Cheesecake

This creamy and delicious cheesecake is a traditional Ukrainian dessert made with "Tvaorg", or Farmer's cheese.
Made with only a few ingredients like cottage cheese, sour cream, sugar and semolina, this recipe can easily be adjusted to taste.

Notes

*You can blend the farmer's cheese for a more "cheesecake-like" texture, but I personally like the clumps.
*Type of cheese:
This recipe is best with firm farmer's cheese, but can be substituted with regular cottage cheese. Full-fat is recommended, but we tried low-fat and lactose-free and it tasted just as delicious.
*Sour cream can be substituted for low-fat or Greek yoghurt.
*Use a sugar substitute like monkfruit or stevia for sugar-free.
